Introducing Cyan: The Grand Brighton's new all day dining restaurant

 

We're delighted to announce that a brand new all-day dining restaurant has come to The Grand Brighton! Cyan, which has replaced GB1, opened its doors for the first time last night on November 28th with a private launch party hosting Brighton's finest. 

 

Our guests got an exclusive chance to grab a sneak peek at what the new restaurant has to offer, alongside the sounds of Brighton DJ, Freemasons, who performed an exclusive set in the evening. The party was certainly a fizz-filled affair, with more than 12 magnums of champagne supplied by Moet & Chandon, and rounds of local white, rose and sparkling wine from our wonderful suppliers: Matthew Clark; Butlers Wine Cellar and Bluebell Vineyards.

 

The new restaurant will have big emphasis on local produce, with aims to use only the best and freshest locally sourced and sustainable ingredients for its small plates and sharing platters. Cyan's local suppliers include Great British Charcuterie (based in Brighton's marina), B&N Fish and Trenchmore Farm among many more.

 

Our local connections don't just stop at food. We've had the pleasure of enlisting Brighton-based artists Weez & Merl to develop some bespoke marbled artwork, coasters and menu boards made from recycled waste to complement our newly designed interiors. 

 

The restaurant’s food and drink menu is inspired by culture, heritage and travel, and we're delighted to welcome on board our very well-travelled head chef, Kirk Johnson, who will be working alongside former-GB1 executive chef Alan White. Kirk, joins us after 30 years’ experience in the kitchen after completing training at The Savoy and working across the globe on the Queen Elizabeth II cruise liner among many other successes. 

 

Kirk is excited to get creative while coming up with the seasonally changing dishes. He said: “The restaurant seats 80, and with 15 to 20 ever changing dishes we certainly have an exciting challenge on our hands, but we’re looking forward to keeping things interesting for our diners with a variety of options for meat eaters, pescatarians, vegetarians and vegans.”

 

While the restaurant has had a contemporary redesign some aspects which made GB1 unique have remained. The 155-year old marble columns are still a central point and continue to be surrounded by a circular bar. However the bar has been reworked to provide an area for remote workers to settle down in during the day and for groups of friends to be entertained with an interactive dining experience by night.

 

Pedro Watson, restaurant manager at Cyan, added: “We are extremely excited to launch Cyan at The Grand Brighton and believe it will breathe a fresh lease of life into Brighton’s dining offering. We want people to feel comfortable and relaxed, whether they are grabbing brunch, wanting a place to work with a coffee or a fun and vibrant atmosphere to share dinner and an organic glass of wine with friends.

 

“We’re also bringing theatre to the dinner table with interactive dining experiences, live cooking with our chefs and a flair to drinks with our specially designed micro-herb refrigerator ready for any finishing touches.”
